Three-night collaboration brings together Thailand's four regions and French culinary artistry

Bangkok, 8 January 2026 — Khum Hom at Mövenpick BDMS Wellness Resort Bangkok presents the first of its 2026 Four Hands Culinary Experiences, welcoming internationally renowned two Michelin-starred Chef Michel Portos for an exclusive three-night engagement from 3-5 February 2026.
This rare collaboration between Chef Portos and Khum Hom's Chef Ian Kittichai explores the natural affinity between Thai and French gastronomy, two culinary traditions rooted in regional diversity, seasonal rhythms, and the central role food plays in social life. Though separated by continents, both cultures share a profound respect for ingredients, technique, and the art of the table.
Chef Portos brings a distinguished pedigree to Bangkok. Named Cook of the Year 2012 by the Gault & Millau Guide, he earned his first Michelin star at Côté Théâtre in 2001 before achieving two stars at Le St. James in Bouliac in 2009. More recently, as consultant chef at Chez Jeannette, Peyrassol, he guided the restaurant to Michelin star recognition in 2025. A Knight of the Legion of Honour and Disciple d'Escoffier, Chef Portos has spent his career exploring the intersection of Mediterranean flavours and global influences.
The collaboration showcases ingredients from Thailand's coastal regions paired with French technique and precision. Chef Portos presents Surat Thani Oyster, Cannelloni with eggplant caviar and cockles, and Phuket Lobster Bourguignonne style. Chef Ian counters with Hoi Shell, pan-seared scallop served
with a herbal sunchoke-coconut purée, and See-Krong Toon Sapparod, slow-braised beef short ribs with pineapple wild curry and steamed Hom Hua Bon rice.


"Working with Chef Portos allows us to explore how two distinct culinary languages can create a shared conversation," says Chef Ian Kittichai. "We're not attempting fusion, but rather presenting dishes that speak to each other, honouring our respective traditions whilst discovering unexpected harmonies."
The experience is available as a seven-course menu at THB 5,500++ (THB 9,000++ including wine pairing), and a nine-course menu at THB 6,200++ (THB 10,400++ including wine pairing).
