Mountain and Kiln Welcome Chef Chalee Kader and Chef Num Weerawat Triyasenawat From Bangkok This November
This November, Mountain and Kiln will welcome Chef Chalee Kader and Chef Num Weerawat Triyasenawat, trailblazers in Thailand’s modern culinary landscape, to cook alongside the teams at the Soho restaurants.
As two of the most influential and exciting chefs in Thailand, Chef Chalee Kader and Chef Num Weerawat Triyasenawat are renowned for their ability to balance a respect for Thai culinary heritage with bold modern innovation. Both Chef Chalee and Chef Num are dedicated to the use of the finest regional ingredients. Their cooking is led by seasonality and sustainability, championing local farmers and artisans, who preserve time-honoured processes and techniques. Chef Chalee first brought his uncompromising take on Isaan cooking and sourcing to Bangkok with 100 Mahaseth, followed by Wana Yook which foregrounded Khao Kaeng. Chef Num has dedicated his career to redefining Isaan cuisine, elevating its heritage and distinctive flavours through his restaurant Samuay & Sons and as Chef Director of Mahnoi Food Lab. Earlier this year Kader and Triyasenawat joined forces to open SOMA, a modern Thai Kitchen in Bangkok. SOMA has quickly established itself amongst the Bangkok dining scene and brings together the best of regional Thai ingredients and wood-fire cooking to offer a contemporary perspective on Thai cuisine.

At Mountain, Chef Chalee and Chef Num will collaborate with Tomos Parry and his team for an exclusive lunch on Tuesday 4th November, creating a menu which pairs their innovative Thai flavours with some of Mountain’s signature dishes, cooked following Tomos’s fire-led approach. At the heart of the menu will be all the chefs' unwavering dedication to using quality local and seasonal produce. Having established long-standing sourcing networks with some of the UK’s most forward-thinking and well-respected farmers, Tomos will introduce Chef Chalee and Chef Num to their trusted growers and work together to shape dishes which showcase the best of the UK’s seasonal produce.

On Wednesday 5th November, a Laab bar will take over Kiln in the evening. Having previously collaborated with Kiln, Chef Chalee and Chef Num will return to share their distinctive approach with diners. Guests will be able to enjoy the fresh and aromatic flavours of the Thai salads which similarly make the most of seasonal produce. The salads will capture Chef Chalee and Chef Num’s signature balancing of traditional Thai cooking with contemporary creativity.

Kiln’s Laab bar will take place on 5 November from 6pm-11pm and is open for walk-in only.
