18 SEP - KIMPTON MAA-LAI BANGKOK POURS A CENTURY OF VERONA AT AN EVENING WITH MONTE ZOVO

Ms.Jigger hosts a five-course dinner by Head Chef Danilo Aiassa paired with five wines from the Cottini family’s Veneto estates 

Kimpton Maa-Lai Bangkok continues its run of wine evenings on Friday, 18 September 2026, when Ms.Jigger hosts An Evening with Monte Zovo, a five-course Italian dinner built around five wines from one family-run winery in Veneto, northern Italy. From 7:00 p.m., Head Chef Danilo Aiassa sends out a menu shaped dish by dish for the wine beside it, while Matteo Cecchetto, APAC Manager for Monte Zovo, guides guests through the pours, the vineyards and the generations behind them.

 

 

THE FAMILY BEHIND THE LABEL

Monte Zovo has been a Cottini family estate for a hundred years. Carlo Cottini founded the farm in Valpolicella in 1925. His son Raffaello built the cellar at Fumane in 1950 and bought the historic vineyards at Zovo, in Caprino Veronese, in 1965. Third-generation Diego founded Monte Zovo itself in 1998. Today the fourth generation runs it: Diego’s sons Michele, the winery’s oenologist, and Mattia, working alongside their mother Annalberta.

The family’s point of pride is that the wine never leaves their hands. Every stage, from soil to bottle, happens inside their own facilities across three municipalities in the province of Verona, at a time when most of the industry has spread those steps across a dozen suppliers.  

 

FIVE COURSES, FIVE WINES 

 

The evening opens on the lightest thing in the room. An amuse-bouche of Carpaccio di Capesante con Caviale Oscietra, Hokkaido scallop carpaccio with Oscietra caviar and an orange dressing, arrives with the Monte Zovo Pinot Grigio DOC 2024.

The appetizer Mortadella Arancino, crisp-fried and served with a smoked paprika sauce, is paired alongside the Monte Zovo Calinverno Veronese IGT 2020, a Veronese red built from dried grapes and aged in French oak.  

The pasta course is Paccheri alla Ciociara, wide tubes with porcini, tomatoes, stracciatella and crisp guanciale, matched to the Monte Zovo Sa’ Solin Amarone della Valpolicella DOCG 2021.  

For the main course, guests choose between Merluzzo Fresco con Caponata e Salsa alle Vongole, fresh cod with Sicilian caponata, clam sauce and a herb crust, and Guancia di Manzo con Purè di Cavolfiore e Piccole Carote, slow-braised beef cheek with cauliflower purée, baby carrots and a red wine jus. Both are poured with the Monte Zovo Amarone della Valpolicella Riserva DOCG 2016.

Dessert closes the evening with Crostata al Cioccolato con Zabaglione alla Grappa, a dark chocolate and Nutella tart with cocoa nibs and a Prosecco grappa zabaglione, finished with the Monte Zovo Sa’ Solin Valpolicella Ripasso Superiore DOC 2021.
