Bangkok, Thailand — There are evenings that linger long after the last glass is poured. On 20 March 2026, Rossini's at Sheraton Grande Sukhumvit, a Luxury Collection Hotel, Bangkok invites guests into one such evening — a rare and intimate introduction to the culinary world of its newly appointed Chef, Chef Stefano Merlo.

More than a dinner, A Symphony of Signatures & Wine is a conversation told through food. Each course is a window into Chef Stefano's philosophy — his Italian roots, his personal inspirations, and the unmistakable style he brings to one of Bangkok's most storied fine dining rooms.

The menu unfolds across five thoughtfully composed courses, each elevated by distinguished pairings from Castello di Meleto — the historic Chianti Classico estate nestled in the heart of Tuscany — and MrCru, celebrated for bringing exceptional, terroir-driven wines to the finest tables across Asia.

Among the evening's highlights:

A slow-braised Tuscan wild boar (Spezzatino di cinghiale) — cooked in Chianti Classico with juniper berries and aromatic herbs, resting on a velvety potato purée — finds its perfect companion in the Castello di Meleto Chianti Classico Gran Selezione 2019, a wine of depth and quiet authority.

Delicate slices of smoked free-range Barbary duck breast (Insalatina di petto d'anatra), dressed with aged Balsamic vinegar and lamb's lettuce, are paired with the Borgaio Chianti Classico 2021 — a pairing that balances richness with grace.

And at the heart of the menu, a slow-cooked Carnaroli risotto (Risotto al taleggio e Tartufo) enriched with Taleggio cheese, truffle emulsion, and fresh black truffle — a dish that speaks in the language of Italian indulgence, alongside the Castello di Meleto Chianti Classico 2021.
