23 OCT - Rossini's Brings the Flavors of Puglia to Bangkok with a One-Night Wine Dinner

A seven-course journey through southern Italy's sun-drenched heel on Friday, 23 October 2026, at Sheraton Grande Sukhumvit, a Luxury Collection Hotel, Bangkok
Rossini's at Sheraton Grande Sukhumvit, a Luxury Collection Hotel, Bangkok, invites guests to discover Puglia on Friday, 23 October 2026, with a specially curated dinner celebrating the region's ingredients, handmade pasta and native wines. Each course is paired with a wine from Puglia, served in the warm, Tuscan-inspired setting of one of Bangkok's most established Italian restaurants.
Set between the Adriatic and Ionian seas at the heel of Italy's boot, Puglia is known for its ancient olive groves, abundant coastline and a deeply rooted tradition of generous, ingredient-led cooking. The menu draws on that heritage and lets seasonal produce and careful preparation tell the region's story.
The evening opens with an aperitivo of mini fried panzerotti with tomato, mozzarella and basil; crisp frisella topped with marinated anchovies and stracciatella; and cannolo filled with whipped baccalà. The bites are poured with Zeni "Vigne Alte" Soave DOC Classico.
The first course, Tonno, Stracciatella e Olive, is a yellowfin tuna carpaccio with creamy Apulian stracciatella, tomato, Leccino olives, capers and oregano, finished with extra virgin olive oil. The dish speaks to the region's close ties with the Mediterranean and is paired with Sant'Andrea Nero di Troia–Primitivo, Puglia IGT.
Quaglia nella Cipolla follows: braised quail enclosed in an oven-roasted sweet onion, served with cime di rapa, crisp Altamura bread and quail jus. The onion's natural sweetness balances the richness of the quail, while the bitter greens and toasted bread add contrast and texture. Paradise Primitivo, Puglia IGT accompanies this expression of rustic Apulian cooking.

Rossini's pasta craftsmanship comes to the fore with Tortelli alla Norma. The handmade tortelli are filled with ricotta and smoked eggplant and served with tomato sauce, crispy eggplant, Parmigiano Reggiano fondue and basil purée. The dish is inspired by the celebrated Sicilian classic and reinterpreted for the evening's southern Italian theme, and it is paired with 1954 Primitivo, Puglia IGT.
The main course, Agnello alla Brace, brings charcoal-grilled lamb with red wine–braised dried fig and lamb jus. It is matched with U Must Negroamaro, Puglia IGT, a showcase of one of Puglia's signature grapes. The wine's notes of violet, raspberry and dark chocolate stand up to the savory depth of the lamb, making this the pairing of the night.
Formaggi Pugliesi follows, a selection of artisanal Apulian cheeses with fig mostarda, vincotto, toasted Altamura-style bread and seasonal fruit. A trio of petits fours closes the evening: Rossini's Gianduiotto, Cartellata Pugliese and Amarena pâte de fruit.
For food lovers and wine enthusiasts alike, the dinner is a rare chance to experience Puglia course by course, without leaving Sukhumvit.
