26 SEP - A ONE-NIGHT JOURNEY THROUGH THAILAND: BASIL AND GRANMONTE PRESENT AN EXCLUSIVE WINE DINNER

Five expressive pairings bring together contemporary Thai cuisine and the pioneering estate wines of Khao Yai – for one evening only, Saturday, 26 September 2026

basil, the contemporary Thai restaurant at Sheraton Grande Sukhumvit, a Luxury Collection Hotel, Bangkok, will welcome GranMonte Vineyard and Winery on Saturday, 26 September 2026 for an exclusive one-night wine dinner.
Across five paired courses, the evening traces a journey through Thailand’s regions and flavors – from the smoke and tamarind of a welcome bite to the bold coastal heat of Phuket and the gentle sweetness of young coconut.
Conceived as a dialogue between place, flavor and wine, the menu reveals the breadth of Thai cuisine through thoughtfully composed dishes and pairings chosen to heighten its layers of salinity, spice, acidity, smoke and fragrance. Four of the five wines are GranMonte’s own estate-grown cuvées, joined by a classic Châteauneuf-du-Pape for the menu’s boldest course – an evening designed as much for the curious gourmand as for the dedicated wine lover.

A menu that travels across Thailand
The evening opens with Kong Kin Len – Duck & Tamarind, a smoky, tangy welcome bite of duck breast, tamarind gel, pickled shallots and crisp rice.

Plar Pla Hamachi follows: cured hamachi with Thai herbs, banana blossom, lemongrass, roasted coconut and bright citrus, served with GranMonte Crémant Méthode Traditionnelle Extra Brut NV, whose fine bead and bracing freshness sharpen the dish’s aromatic layers.

Tom Jiw Nua, a traditional Thai Wagyu soup poised between salty, sour and spicy, meets GranMonte Gradient Alvarinho 2024 – a lively white that echoes the broth’s fragrant herbs and carries its clean, bright finish.
The evening deepens with Tam Khanun Moo Krob: grilled crisp pork belly with young jackfruit stew, chili and a jus infused with Northeastern herbs, paired with GranMonte Gradient Syrah Grenache Mourvèdre 2023. Its generous fruit and savoury depth stand up to the dish’s richness, heat and earthy intensity.

From the South comes Phuket Tuna & Tai Pla Sauce, seared tuna with bamboo shoots, turmeric, chili and traditional herbs. The menu’s most powerful course is matched by Domaine Pierre André Châteauneuf-du-Pape Rouge 2021, whose structure and warmth meet its depth in full.
To close, Ice Cream Khaopod Maprao Orn layers young coconut and sweet corn semifreddo with fresh red dragon fruit, while GranMonte Bussaba Natural Sweet Wine 2024 completes the journey with fragrant sweetness and a beautifully poised finish.

Thailand’s pioneering wine story
Grown in the tropical terroir of Asoke Valley, Khao Yai, GranMonte’s estate wines are among the most decorated in Thailand and carry the “Khao Yai Wine” Geographical Indication. From traditional-method sparkling and expressive Alvarinho to a Rhône-style red blend and the naturally sweet Bussaba, the evening’s selection captures the winery’s craftsmanship, innovation and confident sense of place.
Set within basil’s intimate, contemporary dining room, the dinner is more than a sequence of courses: it is a meeting of two Thai storytellers – one speaking through the kitchen, the other through the vine. Seats are limited for this one-night-only occasion.
