“The Art of Kimoto” – Savor an Exclusive Six-Course Maruto Sake Dinner with Japan’s Historic Kurosawa Brewery at Akira Back Bangkok

 

Akira Back Bangkok, the acclaimed dining destination on the 37th floor of Bangkok Marriott Marquis Queen’s Park, invites guests to discover “The Art of Kimoto – A Maruto Sake Experience” – an exclusive evening that will elevate innovative Japanese cuisine with stunning city views and the purest sake from Kurosawa Brewery, which has been crafting this iconic beverage using the traditional “kimoto” method since 1858.

For one night only, on Friday June 26, Akira Back's culinary maestros will present a sublime six-course menu, perfectly paired with Maruto sake, Kurosawa’s premium brand. Brewed in the mountainous region of Nagano, this refined label embodies the essence of kimoto brewing – a slow, natural fermentation process which demonstrates a deep respect for nature and results in rich, complex and wonderfully balanced sakes.

As the sun sets over the Bangkok skyline, this epicurean adventure starts to shine with Akira Back’s iconic Salmon Pizza, topped with slices of fresh salmon, enhanced with jalapeño, white truffle oil and umami aioli, and accompanied with the elegant and expressive Maruto Junmai Kimoto Light. This is followed by Domi – fresh red snapper, enlivened with orange tobiko and the subtle heat of chojang sauce, then complemented with the balanced depth of Maruto Junmai Kimoto, the brand’s flagship sake.

 

Discerning diners will then be able to savor the finest produce from Japan’s pure seas. Hotate no Yaki showcases seared scallops with asparagus, coriander and a vibrant yuzu beurre blanc, harmonized with the freshness of Maruto Natural sake, followed by Miso Halibut, the “king of fish,” enhanced with sautéed spinach and shishito pepper. This is paired with the softly textured Maruto Junmai Kimoto 80 Usu-Nigori Nama.

 

The gastronomic journey reaches a crescendo with Kagoshima A5 Ribeye, a luxurious cut of ultra-tender Japanese wagyu beef, cooked to perfection and accompanied with creamy mashed potato, kizami wasabi and beef jus. This indulgent dish is elevated with the bold character of Maruto Junmai Kimoto Kinmon Wine Barrel Aged. To conclude, the signature AB Cigar is a playful yet sophisticated dessert, served with chocolate cinnamon ice cream and Maruto Junmai Kimoto Daiginjo Saku 1 for a refined finale.

“The Art of Kimoto – A Maruto Sake Experience” will be staged on June 26, 2026, from 18.00 to 23.00 hrs. The six-course menu with sake pairing is priced at THB 4,900++ per person.
