Sheraton Grande Sukhumvit Hotel – Rossini’s To Showcase Culinary Extravaganza By Michelin Star Chef Paolo Griffa

Bangkok, Thailand – Prepare for an unforgettable culinary journey as Sheraton Grande Sukhumvit, a Luxury Collection Hotel, brings the extraordinary talents of Michelin-starred chef Paolo Griffa to Rossini’s.

This exclusive dining event from 26 28 May 2023, in collaboration with Sanpellegrino, the official partner of the Michelin Guide Thailand and Oman Air, is intended to showcase fine Italian gastronomy during the Italian National Week celebrations. In addition, the Italian Ambassador to Thailand and the President of the Italian Trade Commission will present Chef Griffa with a special award for his extraordinary impact on the culinary world.

On May 26 and 27, diners will be treated to an exquisite set menu that shows off Griffa’s imaginative and exuberant culinary style, including Salmerino Alpino Marinato Yogurt (Marinated Arctic char, radishes and yoghurt), and Crema di Asparagi bianchi e mandorle (White Asparagus and almond chawanmushi with black truffle), his tribute to the American artist, a leading figure of the Pop Art movement. For mains, there is a choice of Merluzzo Nero alla “Mugnaia”, all’ Erbe di Montagna (Butter pan-fried black cod with mountain herbs) or Agnello Glassato, Limone e Dragoncello (Glazed lamb, preserved lemon and tarragon). The meal ends on a sweet note with the chef’s signature dessert: Banana Splash.

Vegetarians won’t be disappointed with the alternative menu Chef Griffa has created for them. It starts with Viola: Patate, Cavoli e Fiori (Purple: potatoes, flowers and cabbage), the Crema di Asparagi bianchi e mandorle, and the Tajarin alle Erbe (Tajarin pasta with garden herbs, kaffir lime, chilli and black garlic). For mains, he pays tribute to another art great with Riso Blue e Oro (Marc Chagall blue & gold rice). Both menus are priced at THB 5,800++ or THB 8,000++ for a pairing with premium beverages.

On May 28, an exclusive lunch experience awaits in the hotel’s Royal Suite. Limited to a select 10 guests, the meal is preceded by a premium beverage reception, followed by a delectable six-course menu priced at THB 15,000++ per person inclusive of a meticulously curated premium beverage pairing. This intimate affair, which includes an exceptional performance by the award-winning Thai opera group, Fivera, promises to captivate and indulge the senses of every guest.

Born in the gastronomically rich region of Piedmont (think Barolos and white truffles), Chef Paolo Griffa has trained in some of the world’s best restaurants in Italy and France, including the Two-Michelin star restaurants Combal Zero, Piccolo Lago, and Serge Vieira, and the One-Michelin star Le Chateaubriand, and Septime. In 2015, he won the Sanpellegrino Young Chef award for Italy and earned a Michelin star for the Petit Royal restaurant in Courmayeur, just two years after joining.

In 2021, Forbes recognised Chef Griffa among the 100 most influential Italians under 30. Three months after realising the dream of his own restaurant in August 2022, Paolo Griffa al Caffè Nazionale in Aosta received its first Michelin star. His innovative and joyful cooking style here celebrates the Aosta Valley, blending traditional recipes with intriguing and surprising culinary creations. In addition, it is Italy’s first haute cuisine restaurant and patisserie to utilize a capillary system of supervision and monitoring of all equipment, significantly reducing its environmental impact.
