Italian culinary master Giacomo Vinci presents inaugural Degustation Menu at Rossini’s

Sheraton Grande Sukhumvit, the iconic Luxury Collection Hotel in the heart of Bangkok, is delighted to introduce its discerning diners to an exciting new era of Italian gastronomy as it presents the cuisine of Giacomo Vinci, the newly appointed Executive Sous Chef who trained in Sicily and has delighted diners all around the world with his classical techniques and creative flavors.

Every evening (17:30-22:30 hrs.) from January 15th to March 31st, 2024, hotel guests and local residents can come together and savor Chef Giacomo’s inaugural “Degustation Menu” at Rossini’s, Sheraton Grande Sukhumvit’s authentic and award-winning Tuscan ristorante, which has been included in the Michelin Guide every year since 2017. This four-course fine-dining odyssey has been crafted using the finest local and imported ingredients, and paired with a selection of exceptional Italian premium beverages that perfectly accompany each plate.

The culinary journey commences with bruschetta con lenticchie al ragu (toasted bread with lentil ragout, chicken pâté and colonnata lard), or zuppa di zucca rossa (a silky-smooth pumpkin soup with chestnuts and shaved mushrooms), complemented by a flute of Casa Martelletti Prosecco DOC, an extra dry sparkling premium beverage from the Veneto region of Italy.

This will be followed by a masterclass in the art of pasta making, with the choice of pappardelle al ragù di cinghiale (pappardelle pasta in slow-cooked wild boar ragout), or handcrafted gnocchi agli spinaci (spinach gnocchi with gorgonzola cheese and toasted walnuts). These delectable dishes will be served with a deep red Italian Chianti, Visna di Pallino Tenute Sette Font, DOCG.

Diners can then choose from Chef Giacomo’s two mesmerizing main courses which showcase the finest produce from land and sea. Petto d’anatra su purea di sedano rapa (duck breast on celeriac purée and asparagus with raspberry sauce) or merluzzo del Mediteraneo su fagioli cannellini (Mediterranean sea bass on cannellini beans and roasted potato) will be paired with Crognola, Tenuta Sette Ponti IGT, a beautifully balanced and fruity Italian red premium beverage.

This epicurean adventure will them conclude with a choice of creamy panna cotta al rum (rum panna cotta with aged strawberry balsamic) or an enticing torta di mandore e cioscolato (almond & chocolate cake with vanilla gelato), complemented with a glass of Massolino Moscato d’Asti DOC, a sweet and fragrant Italian dessert premium beverage. All guests will then be treated to Segafredo coffee, tea and sweet treats.

During his travels around the world, this creative culinary innovator has embraced the different cultures and fresh ingredients of every country, while also respecting and retaining the time-honored traditions of his Italian heritage.
