Renowned Italian Chef Giacomo Vinci Joins Rossini’s at Sheraton Grande Sukhumvit Bangkok

Rossini’s, the acclaimed establishment at Sheraton Grande Sukhumvit Bangkok, proudly welcomes Chef Giacomo Vinci, new Executive Sous Chef taking the helm at the city’s renowned Italian restaurant’s kitchen.

Hailing from the picturesque Sicily, South Italy, Chef Giacomo brings his rich culinary heritage and international experience collected through his 15-year careers to elevate the fine dining experience at Rossini’s. He has a strong passion not only about food but also customer service.

Leaving his home country at a young age, Chef Giacomo traveled to work at top-notch restaurants and luxury hotels in various continents—from Brunei, Switzerland, Bali, Singapore, to Qatar. Passionate about creating memorable dining experiences, Chef Giacomo has spent almost two decades perfecting his craft in kitchens around the world, including notable stints in Qatar as acting Executive Chef at Qablia Westbay Autograph Collection Marriott—just during the preparation of the world’s most anticipated sports event, the World Cup—and the highly competitive culinary industry in Singapore, which he describes as a very challenging yet exciting place to work.

Chef Giacomo officially assumed his role at Rossini’s on December 1, 2023, last month of the year and the right time and busy time during the greeting season. He has brought with him a wealth of expertise in traditional Italian cooking with a contemporary twist. Known for his commitment to honoring the authenticity of Italian cuisine, Chef Giacomo innovative approach adds a modern flair to the culinary landscape.

This is the first time he has worked in Thailand. However, Thai cuisine and market scenes are not something alien to him. “I love grilled fish,” he says, adding that: “One of the joys for me coming from Middle East arriving in in Thailand was like the variety of ingredients, the freshness and the quality and the large amount of options.”

Chef Giacomo’s signature dish is an exquisite pasta prepared in the time-honored Italian way, a testament to his dedication to tradition. Beyond his commitment to culinary heritage, Chef Giacomo is renowned for infusing his creations with unique twists that captivate the palate, making every bite a journey of discovery.

Talking about his signature dishes and what he’d like guests to try, Chef Giacomo says: he loves cooking pasta dishes. “It’s like going back to basic, influenced by Tuscany culinary. Like a dessert I like everyone to try, it is a Tiramisu Lava which gives the famous dessert a new twist. “

Upon his arrival, Chef Giacomo has curated a special menu that well showcased the depth of his culinary prowess, such as homemade Fettuccine with Porcini mushroom cream sauce or Tiramisu with Espresso Soaked Ladyfingers. The initial offerings include a delightful array of dishes that blend traditional flavors with contemporary finesse, setting the stage for an exciting new chapter at Rossini’s.
