To celebrate the flourishing and vibrant season, Chef Gabriele introduces new and imaginative dishes for the inspiring seasonal menu, carefully selecting fresh seasonal spring ingredients such as salmon, blue swimmer crab, white asparagus and zucchini flowers, all perfect for this time of year. Delicate zucchini flowers, now in full bloom, offer their fresh petals, while white asparagus, a healthy and fat-free vegetable rich in vitamin C, adds a nutritious touch to these special creations.

  • Fiore di zucchina – A springtime classic featuring fresh zucchini flowers filled with ricotta and rich, creamy squacquerone cheese, baked to perfection. It is served alongside a vibrant fresh tomato salsa and grape saba.
  • Trota salmonata – This wonderful dish features salmon trout readily available from March to May. With its mild flavour, it pairs well with fresh white asparagus, known for its subtle sweetness compared to green asparagus.
  • Pizza primavera – A timeless classic adorned with mozzarella fior di latte, Taleggio cheese, fresh green asparagus and delicately rolled pancetta. Fresh from the wood-fired oven, this delicious creation promises to leave taste buds tingling with satisfaction.
